FERMÍN Lomo Ibérico de Bellota Pre-Sliced
Iberico Acorn Fed Dry Cured Pork Loin. Made from a special breed of pig indigenous to Spain, Fermín rubs the pork loin with salt, wild mountain oregano, and Pimentón de la Vera and allows it to cure in the pure mountain air. The marbling and main flavor profile of this meat is due to the special diet and exercise regimen that these pigs enjoy as they graze freely and happily on their favorite food: acorns.
- Tasting Notes: Unlike jamón, Lomo has very little fat, but the pimentón provides a rich smoky flavor Serve thinly sliced on its own or with a drizzle of olive oil.
