Our Paleta Ibérica de Bellota – Bone-In is made from the front shoulder of the prized Mamellado-Lampiño breed, a rare and genetically pure lineage of 100% Iberian pigs. Known for their exceptional marbling and slower growth, these pigs produce richly flavored meat with a beautiful fat distribution that creates an elegant, robust paleta.
Cured traditionally for 48 months (4 years), this bone-in paleta delivers a deep, complex flavor with earthy and nutty undertones. The bone-in aging process enhances its authentic character, resulting in a savory, melt-in-your-mouth texture that sets it apart from other cured meats.
