Dulces de Cristal. Whole dry Choricero Peppers, aka choricero, are a type of elongated red pepper that is dried.They can be added to flavor stews, soups or as a base for sauces. They add a wonderful earthiness to recipes. To use them, you’ll want to rehydrate them to remove the seeds and stem discarding the “skin” portion and using the softer, fleshy part for cooking. No Bacalao a la Vizcaina (a Basque codfish stew) would be complete without these meaty, dried peppers.
