Guirlache is Spain’s crunchy answer to nougat. Whole toasted almonds are set in glossy caramelized sugar and finished with sesame seeds. It snaps into golden-brown shards with a deep, nutty sweetness. Pablo Garrigós Ibáñez makes it in Jijona, Alicante, and packs it in the Delicatessen gift box with the Calidad Suprema seal. Serve it with coffee at the end of a holiday meal, set it on a dessert board with soft cheese and dried fruit, or crush a little over vanilla ice cream or flan.
