In the summer gardens of Navarra, calabacín grows in abundance, and La Catedral de Navarra has long understood how to make the most of it. Their Crema de Calabacín is a testament to what thoughtful sourcing and careful production can do with the simplest of ingredients.
Smooth, pale green, and delicately flavored, this cream is the lightest of La Catedral's range — fresh and gentle on the palate, with a natural sweetness that makes it as welcome in summer as in winter. Made from locally grown Navarran zucchini at peak season and blended to a silky finish, it is proof that great ingredients need very little help.
Serve it warm or chilled — one of the few soups that works beautifully either way.
