Introducing AMA Brewery, brewed in small batches from the Basque Country in Northern Spain. This naturally low-ABV, gently sparkled beverage is made from fermented teas and tisanes. They are naturally dry and very complex, making AMA a new category of limited and specialized fermented beverages.
This is the BI bottle. It's made with organic lemongrass from the Amba Estate, a nature reserve and organic tea farm in the Uva Highlands of Sri Lanka. Harvesters at Amba Estate hand-cut lemongrass with a machete, harvesting only the soft, flavorful leaves rather than the woody stalk. The lemongrass is sun-dried to highlight the essential oils, allowing for a bright, complex flavor profile.
AMA’s Bi is bottle-aged for at least six months at the brewery before being released into the market, with the ability to improve and evolve further in bottle for up to three years longer. The longer it ages, the smaller and more refined the bubble. Each fermentation batch produces approximately 280 bottles!
- Flavor Profile: Aromas of citrus and balsamic. On the palate, notes of white flowers, ginger, juniper, lime leaf, and white pepper, with a touch of sweetness and crisp, lively bubbles.
- Pairings: Serve in white wine glasses at traditional Champagne temperatures—pairs well with shellfish, grilled fish, and citrus or dairy-based desserts.
