QUESO D.O.P. CABRALES (Quesera del Cares)
Cabrales is the bold one. This raw cow's milk blue cheese from Asturias is creamy, tangy, and intensely savory, with the sharp, peppery bite that makes blue cheese lovers go quiet. If you're trying it for the first time, a small piece goes a long way, especially with something sweet.
Quesera del Cares makes this wedge under the Cabrales Denominación de Origen Protegida (DOP), and the cheese is matured in the natural caves of the Picos de Europa. Longtime fans will recognize the marbled veining and rich, lingering finish. Serve it with quince paste, a drizzle of honey, or fresh figs, or crumble it into a steak sauce or over a warm potato dish.

Pickup is only available from Despaña Fine Foods & Tapas Cafe in SoHo. Orders need to be placed 24 hours in advance of pickup.
